18-1.00 GENERAL

18-1.00 总则

18-1.01All food and beverage deliveries are checked and weighed at the receiving area by the receiving clerk before they are moved to the food and beverage storerooms. Food and beverage items are kept either on steel shelving in open racks, in boxes in the screened-in bulk storage area or in cold storage in the refrigerators or freezers.

所有食品和饮料在转到食品饮料储藏室之前,均应由收货员在收货区检查并称重。食品和饮料保存在开架的钢制货架、带筛眼大型储藏区中的箱子或者冰箱或冷库中的冷藏储藏区中。

18-1.02 Food and beverage storage must be laid out by the kitchen planning consultants and approved by Hilton Hotels Corporation.

食品和饮料储存方案必须由厨房规划顾问设计并由希尔顿酒店集团批准。

18-1.03 Food and beverage storerooms must have a minimum clear ceiling height of 9‘-0‖ (2.7m).

食品饮料储藏室天花板净高至少应为2.7 米。

18-1.04Food storage areas must be centrally located between the receiving area and the preparation area, but separate from the chef‘s coolers and banquet prep area.

食品储藏区必须位于收货区和取菜区之间的中间,但与厨房冷库和宴会取菜区分开。18-1.05 Liquor and wines are kept in a separate locked storeroom with a cool area for wine storage.

18-1.06 Liquor storage areas should be located adjacent to the primary service circulation and reasonable proximate to the receiving area. Convenient access to liquor storage must be available from the banquet service corridor, the lounge and the kitchen service bar.

酒类储藏区应位于主服务流通区附近,并应相当靠近收货区。必须可从宴会服务走廊、酒廊和厨房服务吧方便地进入酒类储藏区。

18-1.07 The beverage dispensing equipment room should be centrally located to the required dispensing points.

饮料配给设备室应位于所需配给点的中央。

18-1.08 Bulk unprepared food both dry and refrigerated, must be stored separately from issued and prepared food.

大量未加工食品(包括干食品和冷冻食品)的存放必须与发放和已加工食品分开。

18-1.09 Provide only one lockable point of access to the liquor storage area. Locate the walk-in refrigerator within the storage area.

为酒类储藏区只设一个入口,要求上锁。将高温冷库设在该储藏区内。

18-1.10Provide modular, prefabricated walk-in refrigerators and freezers with fieldinstalled, four-inch, urethane sheet foam insulation, vapor-proof light fixtures, exterior thermostats and high temperature alarm system.

为模块化、预组装高温冷库和低温冷库提供现场安装,并配备四英寸聚氨酯发泡保温板材、防蒸汽灯具、外部恒温装置和高温报警系统。

18-1.11 Walk-in boxes shall be 8'-6" high (2.5m). Provide an integral bulkhead or a gyp board bulkhead from the top of the box to the underside of the ceiling or structural deck above.

冷库箱体的高度应为2.5 米。从箱体的顶部到天花板下侧或者结构底板上方采用一体化舱壁或者石膏板舱壁。

18-1.12 Provide floor recess for door heaters in walk-in boxes.

提供地面下沉以安装冷库箱体中的门加热器。

18-1.13 Walk-in boxes shall be specified without prefabricated floors. Recess and insulate building floor slab below. Isolate all refrigerator and freezer floor slabs from surrounding area.

冷库箱体应设在无预制板楼面。其下方为下沉和隔热楼板。将所有高温冷库和低温冷库的楼板与周围环境隔开。

18-1.14 Partitions surrounding the liquor storage area must extend and be secured to the underside of the structure above.

包围酒类储藏区的隔墙必须延伸并固定到上层结构板底。

18-1.15 Shelving in walk-in refrigerators should consist of approximately 1/3 full height shelving, 1/3 dunnage / slatted racks and 1/3 open area. Place full height shelving to rear of refrigerator.

高温冷库中的货架应包括约1/3 全高度货架、1/3 支撑板/板条货架和1/3 开放区。将全高度货架放在冷库的后部。

18-2.00 DOORS, WINDOWS and HARDWARE

18-2.01Provide a removable core lock cylinder that is not on the building master keying system for the entrance door to the liquor storage area.

为通往酒类储藏区的入口门提供独立于建筑总钥匙系统的可换芯门锁。

18-2.02Doors on walk-in boxes shall have a 12" w x 16" h (300mm x 400mm) minimum vision panel. Do not provide reach-in doors.

18-2.03Entrance doors must be a minimum of 3‘-6‖ wide (1m) and have lockset,

kickplate, and closer with hold open feature.

18-3.01 FOOD AND BEVERAGE STOREROOMS:

Floors - Non-skid quarry tile, with carborundum particles

Base - Quarry tile (Coved base)

Walls - Epoxy paint / FRP

18-3.02 Provide non-skid quarry tile with coved base in walk-in refrigerators and freezers.

在高温冷库和低温冷库中提供防滑缸砖并采用基拱墙踢脚。

18-3.03 Washable ceiling system must have an aluminum grid.

可水洗天花板系统必须配有铝制网格。

18-3.04 Provide metal or rubber corner guards and wall railings at columns and wall outside corners

为柱子和墙壁外角提供金属或者橡胶护角和墙壁扶手式保护板。

18-6.00 MECHANICAL / PLUMBING

18-6.01 Provide heating and ventilation in storage areas.

在储藏区提供供暖和通风设备。

18-6.02 Size condensing units and evaporator coils for walk-in boxes to operate refrigerator at +35°F (1.6Cand freezer at -10°F (-23C).

为冷库箱体确定冷凝装置和蒸发器盘管的大小,使高温冷库保持在+1.6°C,使低温冷库保持在-23°C。

18-6.03All large compressors shall be remotely located from the equipment they service, either rack-mounted in an adjacent compressor room or clustered on the roof above in a weather proof enclosure and screened from guest view.

所有大型压缩机应采用远程方式为相应的设备提供服务——或者采用机架安装方式装在毗邻压缩机室,或者采用集群方式安装在屋顶上,并通过适当的防风雨措施和屏蔽以免客人看到。

18-6.04 Provide a floor drain in the beverage dispensing equipment room.

在饮料配给设备室提供一个地漏。

18-7.01 Provide a minimum of twenty (20) foot-candles (215 lux) of general lighting.

提供的总照度至少应为二十(20)英尺烛光(215 勒克斯)。

18-7.02 Provide shielded incandescent vapor-proof ceiling lights in walk-in boxes. All conduit runs shall be on the exterior of the box except the drop to the switch. Provide three way switches for boxes with two or more doors.

在冷库箱体中提供带屏蔽罩的荧光防蒸汽天花板灯。所有线管应在箱体的外部穿行,除非连接到开关。为有两扇或者多扇门的箱体提供三路开关。

18-7.03 Provide a separate circuit for each compressor.

18-7.04 Provide 20 amp duplex convenience receptacle at the entrance of each storage area.

在每个储藏区的入口处提供20 安双联框插座。

18-7.05 Provide a minimum of one 20 amp duplex convenience receptacle on each wall with spacing not to exceed 20 feet (6m) on center.

每面墙壁应至少安装一个20 安双联框插座,各插座的中心距不超过6 米。

18-7.06 Provide a phone in the food and beverage storage room.

为食品饮料储藏室配备一部电话。
